My journey with managing my grandmother’s nutrition began when she was diagnosed with type 2 diabetes. It was a wake-up call for us to reconsider her diet. We started incorporating more fiber-rich foods and balanced meals to help manage her blood sugar levels. One of her favorite new recipes is a simple quinoa salad with cherry tomatoes, cucumbers, and a splash of lemon vinaigrette—nutritious, delicious, and very easy on the sugar!
Another big hit has been smoothies. We blend together fruits she loves with a handful of spinach or kale for that extra boost of vitamins without compromising taste. It’s a wonderful way to ensure she enjoys a variety of fruits and vegetables, and they’re also incredibly easy to consume, which is a plus.
